Featuring Bailey Cole & Kristiana Mallo, co-owners of Cashew, and Corey Evatt, Vegan Blogger
In our 4th podcast, we feature vegan restaurant blogger Corey Evatt, the founder of ChattaVegan.com, and the co-owners of Cashew – Bailey Cole and Kristiana Mallo. Corey’s blog is an excellent source of information for residents and visitors. He has dedicated himself to exploring Chattanooga’s restaurant scene, identifying vegan-friendly dishes, and is working with local restaurants and chefs to have them create more vegan dishes.
One of Evatt’s favorite restaurants is Cashew. This popular restaurant is located on the Northshore, but closed last January so that the owners could pursue expanding the commercial sales of their wildly popular vegan cheese, and bakery items which can be found in a number of restaurants around town.
Co-owners Baily and Kristiana decided to reopen the restaurant but are limiting the days open to Thursday, Friday and Saturday. According to Corey, the local community couldn’t be happier with their decision to re-open.
Chattanooga’s vegan scene is growing, and thanks to all three of these individuals, people outside the Chattanooga area are taking note. We heard stories from all three of people driving from Atlanta and other points on the map just to experience the type of unique vegan dishes. People coming to the Scenic City just for certain foods makes us all giddy.
Evatt, Cole & Mallo all expressed a desire to let people know that this lifestyle is accessible to everyone, and everyone should try vegan dishes, but not just because they’re vegan). Instead, try something new because it tastes great. We sampled some doughnuts while recording the podcast, and have to say we didn’t miss any of the ingredients taken out. Vegan or not, we’re looking forward to further exploring Cashew’s menu.
